Southern Tea Cake Recipe

This is my favorite Southern Tea Cake recipe. I just want some people to know what a tea cake is!

Most tea cakes have a soft cookie like consistency. Tea cakes are typically toasted and buttered and served up with a nice cup of tea. Earl Grey is my favorite tea with Southern tea cakes.

Southern Tea Cake Recipe



Ingredients
1 cup butter (no substitutes), softened
1 1/2 cups sugar
3 eggs
1 tablespoon vanilla extract
3 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt

Directions
In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking powder and salt; gradually add to the creamed mixture (the dough will be soft).

Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 375 degrees F for 7-8 minutes or until the edges are golden brown. Remove to wire racks to cool.
