Sencha Green Tea Cake Recipe - Yummy!!

This is a recipe for a Sencha Green Tea Cake - You can use 8"round or square pans for a layer cake effect. Nice with a not too sweet icing, like whip cream and garnish with fresh fruit.

Green Tea Cake - Sencha



Ingredients:

3 eggs
2/3 cup sugar
1/3 cup boiled water
2 tbsp & 1 tsp sencha loose green tea leaves
1/4 cup vegetable oil (light flavor is best)
1 1/3 cup cake flour
2 tsp baking powder

Preparation:
Preheat oven in 350F. Brew 2 tbsps of sencha green tea in 1/2 cup of boiled water. (brew it strong and longer than if you were going to drink the tea)

Cool the sencha green tea and place in a small mixing bowl. Mix vegetable oil in the green tea. Whisk eggs in a large mixing bowl. Add sugar to the eggs. Sift flour, baking powder, and 1 tsp of green tea leaves into another bowl. Add the half of flour mixture into egg mixture and mix quickly. Add the half of green tea mixture into the bowl and mix well. Add the rest of flour mixture into the batter and mix well. Further, add the rest of green tea mixture into the batter. Mix the batter well. Grease cake pan and place a baking sheet at the bottom. Pour batter into the cake pan. Bake the cake for 35-45 minutes in the oven.
