I have seen many websites that suggest making tea by putting the tea bags in a pitcher of cool water and refrigerating it for 4-8 hours (not all agree on the amount of time). I've done this with green tea and like the taste--it is much more mild, almost sweet. However, I have read that the beneficial catechins in tea taste bitter. So my thought is that maybe I'm not getting as much of the beneficial compounds in the tea if I cold brew and as a result have a less bitter tasting beverage.
