This is the only time I ever eat devilled meat sandwich spread, but it sure tastes good when it is served at an afternoon Tea Party! I just love these tea sandwiches, or finger sandwiches on white bread, crust removed with some gherkin pickle. They are one of my favorites at any tea party or afternoon event. Just a super quick and simple filling that is sure to please some at your tea party. Simply spread the devilled meat to the edges of the bread. Roll or layer your sandwiches and cut 1 inch thick to serve. Options for Devilled Meat Tea Party SandwichesGherkins – You can add a little color to this one using gherkins. Make sure you towel dry the little pickles before placing them on the edge closest to you before rolling. This way they won’t bleed into the sandwich. If you are layering sandwiches, just chop the gherkins quite fine and blend them into the filling. Onion - You can add onion chopped very fine. I also recommend that you use red onion vs a cooking onion - or perhaps a mild shallot. While this adds excellent flavor to the tea party sandwich, you don't want your guests to be worrying about thier breath with the onions.
