Best Blueberry Streusel Muffin Recipe - Perfect with Black Tea
I love blueberry muffins with my tea. Any type of tea really, but these muffins go well with strong black chinese type tea. This recipe has never failed me. (No flat top muffins!)
They make a nice big batch of 12 muffins with big blueberry muffin tops covered in a crunchy topping. I hope you like this blueberry muffin recipe as much as I do.
Blueberry Struesel Muffin Recipe
1 cup of milk made with powdered milk
1/4 cup of vegetable oil
1/2 teaspoon vanilla extract
1 cup all purpose flour
1 cup whole wheat flour
1/3 cup white sugar
3 teaspoons baking powder
1 cup frozen blueberriesStreusel Topping
1/4 cup all pupose flour
2 tablespoons brown sugar
2 tablespoons butter
1/4 teaspoon cinnamon
Heat oven to 400 degrees. Prepare the Streusel Topping by mixing all ingredients with a pastry blender.
Grease a 12 cup muffin tin.
Beat milk, oil, vanillla and egg. Stir in flour, sugar, baking powder until flour is moistened. Your batter will be lumpy. Fold in the blueberries do not over fold.
Fill the muffin tin and divide the streusel topping evenly over the muffin tops. Bake 20-25 minutes. Makes one dozen beautiful muffins.
